- 1 Whole Avocado (diced)
- ½ Cup Cherry tomatoes (halved)

- 1 Tsp Olive oil
- 1 Tsp Ground cumin
- ½ Tsp Smoked paprika
- Salt and pepper, to taste (to taste)
- 2 Tbsp Fresh cilantro, chopped (optional) (chopped)
- 2 Tbsp Greek yogurt or sour cream (optional, for topping)
Preheat Oven: Preheat your oven to 400°F (200°C). Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry.
