  • 1 Large mixing bowl
  • 1 Fork or potato masher
  • 1 Spoon
  • 1 Greased baking sheet or aluminum foil
  • 1 Knife for cutting potatoes
  • 1 Steamer or microwave-safe bowl for steaming broccoli

Ingredients
  

  • 2 medium to large Russet potatoes
  • 1/2 cup nonfat plain Greek yogurt (Oikos Organic recommended)
  • 1/4 cup skim milk
  • 2 cups broccoli steamed and chopped
  • 1/4 cup shredded sharp cheddar cheese (divided)
  • Salt and pepper, to taste

Instructions
 

  • Preheat Your Oven:
    Set your oven to 400°F (200°C). This gives it enough time to heat up while you prepare the potatoes.
  • Microwave the Potatoes:
    Wash and scrub the Russet potatoes thoroughly. Prick each potato several times with a fork to allow steam to escape. Microwave on high for 10 minutes, flipping halfway through, until the potatoes are tender.
    Scoop Out the Potatoes: Carefully cut each potato in half lengthwise. Scoop out the flesh, leaving a thin layer of potato to help the skins hold their shape.
  • Prepare the Filling:
    In a large bowl, mash the potato flesh with a fork until smooth. Stir in Greek yogurt, skim milk, steamed and chopped broccoli, and half of the shredded cheddar cheese. Mix well until creamy and smooth.
  • Stuff the Skins:
    Arrange the potato skins on a greased baking sheet. Evenly spoon the potato mixture into each skin, mounding it generously.
  • Add Cheese and Bake:
    Sprinkle the remaining cheddar cheese over the stuffed potatoes. Bake for 20 minutes, or until the cheese is melted and bubbling.
  • Serve and Enjoy:
    Allow the potatoes to cool slightly before serving. Enjoy them as a standalone dish or pair them with your favorite protein.
